Vegan Glamorgan Sausages

Avant-Garde Vegan chef Gaz Oakley shares his easy recipe for a traditional, tasty Welsh classic, Glamorgan Sausages.

Ingredients

  • 80 grams - breadcrumbs
  • 1 handful - fresh sage finely chopped
  • 1 clove - garlic minced
  • 1 large - leek chopped
  • 1/2 tbsp - mustard
  • 1 litre - oil for frying
  • 380 grams - potatoes mashed
  • 1 pinch - sea salt and pepper
  • 50 grams - vegan cheese
  • 2 tbsp - vegetable oil
  • 1 tbsp - white miso paste

Glamorgan sausage coating

  • 200 grams - gram flour
  • 250 grams - panko bread crumbs
  • 200 grams - plain flour
  • 1 pinch - sea salt
  • 240 ml - water

Directions

1. Sweat the leek in a large frying pan until soft with the garlic & sage. Then allow to cool.

2. Add the potato, mustard, cheese & miso to a mixing bowl & stir well.

3. Add the cooled leeks & breadcrumbs, and mix with your hands until it all comes together.

4. Portion the mix into equal sizes then form into sausages.

5. Coat the sausages first in flour, then gram flour mixture & finally breadcrumbs.

6. Shallow fry the coated sausage until golden.

7. Serve immediately with a relish of your choice & a sprinkling of chopped chives.

Glamorgan sausage coating

Mix gram flour with water and place plain flour, breadcrumbs, and gram flour mix into separate bowls.
