Preheat the oven to 400F (~200C)
Rinse the cauliflower. Trim the leaves and remove stems. Pat cauliflower dry with paper towel.
Place cauliflower into oven safe pan. You may choose to place veggies around the cauliflower (I chopped up some soon-to-go-bad onions and tomato).
In a small bowl, combine minced garlic cloves with teriyaki sauce. Stir.
Drizzle oil onto cauliflower (about 2-3 tbsp) - I usually dislike using oil but it really made this dish! Rub the oil into the cauliflower with your hands.
Pour on the garlic teriyaki mix. Sprinkle herbs, salt, and pepper onto cauliflower. Rub in with hands.
Cover cauliflower in pan with foil tightly. Cook for 35-40 minutes (depending on the size of your cauliflower . You can check the cauliflower after 35 minutes by lightly "slicing" with a knife - if it is tender and the knife slides in easily it is cooked).
Remove the foil and turn your oven onto "broil" - broil the cauliflower for 5 minutes until golden brown.
Melt vegan butter, Italian herbs, garlic powder (optional), and turmeric (optional) in small bowl.
Brush the butter mixture on top of the Tender Roasted Cauliflower.
Slice and serve - add any extra salt/herbs to your liking! ????
There we have it … the Tender Roasted Cauliflower is sure to open your eyes to the versatility of the cauliflower – especially if you have never roasted cauliflower before. Prepare yourself for some goodness!
I paired mine with rice, kale, onion, and beans. I hope you enjoy! <3
