Smoked Almond & Chickpea Salad Sammies

You don't even know about this sandwich. Like goddamn, we can't even... just fucking make it. Trust.

I use premade smoked almonds.

Ingredients

  • 1 - Avocado
  • 8 slices - bread toasted
  • 1/3 cup - celery chopped
  • 3 cup - Cooked Chickpeas
  • 1 tablespoon - Dijon Mustard
  • 1/3 cup - fresh dill chopped
  • 1/4 teaspoon - ground pepper
  • 3 Tablespoons - Lemon Juice
  • 4 leaves - lettuce
  • 3/4 cup - red onion chopped
  • 1/2 teaspoon - salt
  • 1 teaspoon - siracha
  • 1 - tomato

Directions

  1. Add the chickpeas, avocado, and lemon juice to a big bowl and mash the fuck out of them. Some chunks are fine, whatever you like. Fold in the onion, dill, celery, hot sauce, salt, and pepper, then mix it all together.
  2. Once the almonds have cooled, chop them up and add them to the bowl.
  3. Serve up this badass filling on some toasted bread with Dijon mustard, lettuce, and tomato. This is best enjoyed the day it’s made; it keeps fine in the fridge but you might lose some of that crunch.
