Santa Fe Chicken photo

Chicken slow cooked in a crockpot with corn black beans and tomatos.  Serve over rice, or wrap it up in a tortilla

 

Ingredients

  • 15 ounces - black beans canned
  • 1 tsp - cayenne pepper
  • 1/2 cup - cheddar cheese shredded fat free
  • 1 1/2 pounds - chicken breast boneless skilnless
  • 14 ounces - chicken broth
  • 1/4 cup - cilantro
  • 1 tsp - cumin
  • 14 ounces - diced tomatos with green chillis
  • 8 ounces - frozen corn
  • 1 tsp - garlic powder
  • 1 tsp - onion powder
  • 3 whole - scallions chopped
  • 1/2 cup - sour cream low fat

Directions

Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot

Season chicken breast with salt and lay on top. 

Cook on low for 10 hours or on high for 6 hours.

Half hour before serving, remove chicken and shred. 

Return chicken to slow cooker and stir in. Adjust salt and seasoning. 

Serve over rice with sour cream and fat free cheddar cheese.
