Florida Orange Cake

Ingredients

  • 1/3 cup - canola oil
  • 3 cups - confectioner's sugar
  • 3 - eggs
  • 0 - for frosting:
  • 1 cup - orange juice
  • 1 tbsp - orange marmalade
  • 1/4 cup - softened butter
  • 8 oz - softened cream cheese
  • 1/3 cup - water
  • 1 regular size - yellow cake mix

Directions

  1. In a large bowl, combine the cake mix, orange juice, eggs, water and oil; beat on low speed for 30 seconds. Beat on medium for 2 minutes.
  2. Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
  3. For frosting, in a small bowl, beat cream cheese and butter until smooth. Beat in orange marmalade and confectioners' sugar. Spread over cake. Store in the refrigerator. Yield: 12-16 servings.
